Ingredients

  • 2 cups basmati rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 cup frozen peas
  • 2 cups spinach, chopped
  • 4 cups vegetable broth
  • Salt, to taste
  • Cilantro, for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.

  2. In a large pot, heat some oil over medium heat. Add the cumin seeds and cook until they start to sizzle.

  3. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.

  4. Stir in the turmeric powder and garam masala. Cook for another minute.

  5. Add the rice to the pot and stir well to coat it with the spices.

  6. Pour in the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes.

  7. Stir in the frozen peas and chopped spinach. Cover and cook for another 10 minutes, or until the rice is cooked and the liquid is absorbed.

  8. Fluff the rice with a fork and season with salt to taste.

  9. Serve the spinach & pea pilau garnished with fresh cilantro.
