Ingredients
- 1 cup of long-grain white rice
- 2 cups of water
- 1 can (15 oz) of black beans, drained and rinsed
- 1 tablespoon of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 1/4 cup of chopped cilantro (optional)
- Lime wedges for serving

In a medium saucepan, bring the water to a boil. Add the rice, reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the water is absorbed.

While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant, about 5 minutes.

Add the black beans, cumin, paprika, salt, and pepper to the skillet. Stir well to combine and cook for an additional 5 minutes, allowing the flavors to meld together.

Once the rice is cooked, fluff it with a fork and add it to the skillet with the black bean mixture. Stir well to combine and cook for another 5 minutes, until everything is heated through.

Remove from heat and stir in the chopped cilantro, if using. Serve hot with lime wedges on the side for squeezing over the dish.
