Ingredients

  • 1 cup of long-grain white rice
  • 1 can (15.5 oz) of black beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 2 cups of vegetable broth
  • Optional toppings: chopped cilantro, diced avocado, shredded cheese, sour cream

Instructions

  1. In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the rice, cumin, chili powder, salt, and black pepper to the skillet. Stir well to coat the rice with the spices.

  3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the skillet, and simmer for about 15 minutes or until the rice is cooked and tender.

  4. Add the drained and rinsed black beans to the skillet, and stir to combine. Cook for an additional 5 minutes to heat through.

  5. Serve the black beans and rice hot, and top with your favorite optional toppings such as chopped cilantro, diced avocado, shredded cheese, or sour cream.
