Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup apple cider
  • 1/4 cup maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. In a large mixing bowl, combine the flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

  2. In another bowl, whisk together the pumpkin puree, eggs, milk, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Preheat your waffle iron and spray with cooking spray.

  5. Spoon the batter onto the hot waffle iron and cook according to the manufacturer’s instructions.

  6. For the apple cider syrup, mix together the apple cider, maple syrup, and cornstarch in a small saucepan.

  7. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

  8. Reduce the heat and simmer for 2 minutes.

  9. Serve the pumpkin waffles with the apple cider syrup drizzled on top.
