How To Make Quick and Easy Burrito Casserole Recipe

Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 package taco seasoning
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes, undrained
- 1 cup frozen corn kernels
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- Tortilla chips, for serving
- Optional toppings: salsa, sour cream, guacamole, chopped cilantro
Instructions

Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.

In a large skillet, cook the ground beef over medium heat until browned.

Add the diced onion and bell pepper to the skillet and cook until softened.

Stir in the taco seasoning, black beans, diced tomatoes, and frozen corn.

Simmer for 5 minutes, then remove from heat.

Spread half of the cooked rice on the bottom of the prepared baking dish.

Spoon the beef and vegetable mixture over the rice.

Sprinkle half of the shredded cheese on top, then layer the remaining rice and cheese.

Cover the dish with foil and bake for 20-25 minutes, or until heated through and cheese is melted.

Serve with tortilla chips and optional toppings.
