Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 leek, thinly sliced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides. Remove from skillet and set aside.

  2. In the same skillet, add the leeks and sauté until softened, about 5 minutes.

  3. Add the rice and cook for an additional 2 minutes, stirring frequently.

  4. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.

  5. Stir in the cooked chicken and crumbled blue cheese. Cook for another 2-3 minutes until cheese is melted and chicken is heated through.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
