Arroz Amarillo – Yellow Rice Recipe

You can also substitute turmeric for the expensive saffron in this recipe.

A wonderful way to serve rice to elevate your rice meals! Not only it is extremely flavorful from exquisite saffron threads, this dish is also healthy and easy on the digestive system with its anti-inflammatory properties.

Ingredients

  • ¼ cup water
  • 1 cup chicken stock
  • ½ tsp saffron threads, crumbled
  • ¼ cup butter
  • ½ tsp salt
  • 1 cup long-grain white rice

Instructions

  1. In a medium-size sauce pan bring the water, chicken stock, saffron, butter and salt to a boil over medium high heat.
  2. Add the rice and stir.
  3. Cover the pot, reduce the heat to medium-low, and simmer 20 minutes, stirring occasionally.
  4. Remove from heat and let stand a few minutes, then fluff with fork.
