How To Make Coconut Curry Recipe
A comforting bowl of rich and fragrant curry, loaded with veggies, served over rice.
Serves:
Ingredients
- 1 tbsp coconut oil
- 2 tbsp yellow curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 small red bell pepper, sliced
- 2 medium carrots, sliced
- 1 1/2 cups broccoli florets
- 1 can chickpeas, drained and rinsed
- 1 can coconut milk
- Salt, to taste
- 1 cup uncooked jasmine rice
Instructions

Cook rice according to package instructions.

Heat coconut oil in a large skillet over medium heat.

Add curry powder and cook for 1 minute.

Add onion and garlic and cook until softened (about 5 minutes).

Add bell pepper, carrots, and broccoli. Cook for 5 minutes.

Stir in chickpeas and coconut milk. Simmer for 10 minutes.

Season with salt to taste.

Serve over rice.
