How To Make Coconut Curry Recipe

Ingredients

  • 1 tbsp coconut oil
  • 2 tbsp yellow curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 small red bell pepper, sliced
  • 2 medium carrots, sliced
  • 1 1/2 cups broccoli florets
  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • Salt, to taste
  • 1 cup uncooked jasmine rice

Instructions

  1. Cook rice according to package instructions.

  2. Heat coconut oil in a large skillet over medium heat.

  3. Add curry powder and cook for 1 minute.

  4. Add onion and garlic and cook until softened (about 5 minutes).

  5. Add bell pepper, carrots, and broccoli. Cook for 5 minutes.

  6. Stir in chickpeas and coconut milk. Simmer for 10 minutes.

  7. Season with salt to taste.

  8. Serve over rice.
