How To Make Kitchari

Ingredients
- 1 cup basmati rice
- 1 cup yellow mung dal (split yellow lentils)
- 1 tablespoon ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 4 cups water
- Salt to taste
- Fresh cilantro for garnish
Instructions

Rinse the basmati rice and mung dal separately under cold water until the water runs clear.

In a large pot, heat the ghee over medium heat. Add the cumin seeds and mustard seeds, and sauté until they start to sizzle.

Add the turmeric powder, coriander powder, cumin powder, ginger paste, and garlic paste to the pot. Sauté for a minute until fragrant.

Add the rinsed rice and mung dal to the pot and stir well to coat them with the spices.

Pour in the water and add salt to taste. Give it a good stir and bring the mixture to a boil.

Once it starts boiling, reduce the heat to low and cover the pot with a lid. Let it simmer for about 25-30 minutes, or until the rice and lentils are cooked and have a creamy consistency.

Once cooked, remove from heat and let it sit for a few minutes before serving.

Garnish with fresh cilantro and serve hot.
