A flavorful and healthy dish with orzo and roasted veggies.

Ingredients
- 1 cup orzo
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, chopped
- 3 cloves of garlic, minced
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes
- 1/4 cup grated Parmesan cheese
Instructions

Preheat oven to 425°F.

Cook orzo according to package instructions, then drain and set aside.

In a large bowl, combine the chopped veggies, garlic, olive oil, salt, black pepper, basil, oregano, thyme, and red pepper flakes. Toss to coat.

Spread the veggie mixture on a baking sheet and roast for 20-25 minutes, stirring occasionally.

In a large bowl, combine the cooked orzo with the roasted veggies. Sprinkle with Parmesan cheese and serve.
