Ingredients

  • 2 cups fresh spinach
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. In a blender, puree the fresh spinach until smooth.

  2. In a large mixing bowl, combine the spinach puree, flour, eggs, olive oil, and salt. Mix well until a dough forms.

  3. Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

  4. Divide the dough into 4 equal portions and cover with a clean kitchen towel. Let it rest for 15 minutes.

  5. Roll out each portion of the dough with a rolling pin or pasta machine until thin (about 1/8 inch thick).

  6. Cut the rolled-out dough into desired pasta shapes such as fettuccine or spaghetti.

  7. Bring a large pot of salted water to a boil. Cook the pasta for about 3-4 minutes or until al dente.

  8. Drain the cooked pasta and toss with your favorite sauce or toppings. Serve hot.
