Ingredients

  • 1 pound venison, cut into thin strips
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the venison strips and cook until browned. Remove the venison from the skillet and set aside.

  2. In the same skillet, add the onion, mushrooms, and garlic. Sauté until the onions are translucent and the mushrooms are golden brown.

  3. Return the venison to the skillet and stir in the beef broth, sour cream, and Dijon mustard. Season with salt and pepper.

  4. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.

  5. Serve the venison stroganoff over cooked egg noodles or rice. Garnish with fresh parsley.
