Ingredients

  • 1 lb pork tenderloin, sliced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 8 oz rice noodles
  • 1 bunch kale, stems removed and leaves chopped
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp sesame seeds, for garnish
  • 2 green onions, sliced, for garnish
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together soy sauce, honey, brown sugar, garlic, and ginger. Set aside.

  2. Heat a large skillet over medium-high heat. Add the sliced pork and cook until browned on all sides, about 5-7 minutes. Pour the soy sauce mixture over the pork and stir to coat. Reduce heat to low and let simmer for 15-20 minutes, until the sauce has thickened and the pork is cooked through.

  3. While the pork is cooking, cook the rice noodles according to package instructions. Drain and set aside.

  4. In the same skillet used for the pork, heat the sesame oil over medium heat. Add the kale and sauté until wilted, about 3-5 minutes. Stir in the rice vinegar and season with salt and pepper.

  5. To serve, divide the gingered noodles between plates. Top with the sticky pork and kale. Garnish with sesame seeds and sliced green onions.
