Ingredients

  • 8 oz rice noodles
  • 1 lb prawns, peeled and deveined
  • 3 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • 2 tbsp vegetable oil
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1/4 tsp red pepper flakes

Instructions

  1. Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 5-7 minutes, until softened. Drain and set aside.

  2. In a small bowl, mix together fish sauce, soy sauce, tamarind paste, brown sugar, lime juice, and red pepper flakes. Set aside.

  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and sauté for 1 minute.

  4. Add prawns to the pan and cook for 2-3 minutes until they turn pink and opaque. Remove the prawns from the pan and set aside.

  5. Add the sliced bell pepper to the pan and cook for 2 minutes until slightly softened.

  6. Push the bell peppers to one side of the pan and add the soaked rice noodles to the other side. Pour the sauce over the noodles and toss everything together until well coated.

  7. Add the bean sprouts and cooked prawns back into the pan. Stir fry for another 2-3 minutes until everything is heated through.

  8. Remove from heat and garnish with sliced green onions and chopped peanuts.

  9. Serve hot and enjoy!
