Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup snap peas, trimmed
  • 1/2 cup radishes, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh herbs (such as parsley, mint, or basil), chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, snap peas, radishes, red onion, and fresh herbs.

  2. In a small bowl, whisk together the lemon juice and olive oil. Drizzle the dressing over the salad and toss to coat.

  3. Season with salt and pepper to taste.

  4. Sprinkle the feta cheese over the top of the salad.

  5. Serve immediately and enjoy!
