How To Make Spicy Chicken & Veg Stir-Fry

Ingredients
- 2 chicken breasts, sliced
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 1 carrot, julienned
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- ¼ cup chicken broth
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions

In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the chicken slices and cook until browned and cooked through. Remove from the pan and set aside.

In the same pan, add the red and yellow bell peppers, onion, and carrot. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.

Add the minced garlic and ginger to the pan and cook for another minute.

In a small bowl, whisk together the soy sauce, sriracha sauce, honey, cornstarch, and chicken broth until well combined.

Pour the sauce mixture into the pan with the vegetables and stir well. Cook for 2 minutes until the sauce thickens.

Add the cooked chicken back into the pan and toss to coat with the sauce and vegetables. Cook for an additional 2 minutes to heat through.

Season with salt and pepper to taste.

Serve the spicy chicken and veg stir-fry over steamed rice or noodles. Garnish with chopped green onions.
