Ingredients

  • 1 lb lean ground beef
  • 1 cup grated zucchini
  • 1/2 cup diced onions
  • 1/4 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, grated zucchini, onions, bell peppers, garlic, breadcrumbs, ketchup, Worcestershire sauce, dried oregano, salt, black pepper, and eggs. Mix well until all the ingredients are evenly distributed.

  3. Shape the mixture into a loaf shape and place it in a loaf pan.

  4. Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).

  5. Remove from the oven and let it rest for 5 minutes before slicing and serving.
