How To Make Meatballs with Pesto Mash

Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup milk
- 1 egg
- 2 lbs potatoes, peeled and diced
- 3 tbsp butter
- 1/4 cup pesto sauce
- 1/4 cup milk (for the mashed potatoes)
Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, black pepper, milk, and egg. Mix well until all ingredients are evenly combined.

Shape the meat mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through and browned.

While the meatballs are baking, boil the potatoes in a pot of salted water until tender. Drain the potatoes and return them to the pot.

Add the butter and pesto sauce to the pot with the potatoes. Mash the potatoes until smooth and creamy, adding milk as needed to achieve the desired consistency.
