Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped spinach
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine the ground pork, breadcrumbs, grated carrot, chopped spinach, chopped onion, minced garlic, dried oregano, salt, black pepper, grated Parmesan cheese, and beaten egg. Mix well until combined.

  3. Roll the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

  4. Heat the olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.

  5. Transfer the meatballs to the preheated oven and bake for an additional 15 minutes, or until cooked through and no longer pink in the center.

  6. Serve the mini pork and veg balls as is or with a dipping sauce of your choice.
