- 1/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sweetened shredded coconut
- Mini chocolate eggs, to garnish
Instructions
-
Preheat oven to 350°F and line a baking sheet with parchment paper.
-
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
-
Add in the egg and vanilla extract, stirring until well combined.
-
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
-
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Stir in the shredded coconut.
-
Using a cookie scoop or spoon, form 1 1/2 tablespoon-sized balls of dough.
-
Place the dough balls onto the prepared baking sheet and press down the centers with your thumb to create a small indentation.
-
Bake for 12-15 minutes or until the edges are firm.
-
Remove from oven and immediately press mini chocolate eggs in the center of each cookie to resemble a bird’s nest.
-
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
