How To Make Chocolate Coconut Nest Cookies Recipe

A chewy and chocolatey cookie loaded with shredded coconut and topped with mini chocolate eggs designed to look like bird’s nests.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut
  • Mini chocolate eggs, to garnish

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.

  3. Add in the egg and vanilla extract, stirring until well combined.

  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Stir in the shredded coconut.

  7. Using a cookie scoop or spoon, form 1 1/2 tablespoon-sized balls of dough.

  8. Place the dough balls onto the prepared baking sheet and press down the centers with your thumb to create a small indentation.

  9. Bake for 12-15 minutes or until the edges are firm.

  10. Remove from oven and immediately press mini chocolate eggs in the center of each cookie to resemble a bird’s nest.

  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
