Instructions

  1. In a large bowl, combine the grated zucchini, potatoes, onion, and garlic. Mix well.

  2. In a large skillet, heat the olive oil over medium-high heat. Add the vegetable mixture to the skillet and add salt and pepper.

  3. Cook for 20-25 minutes, stirring occasionally, until the vegetables are golden brown and crispy.
