Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 zucchini, diced
  • 2 tomatoes, diced
  • 1 cup corn kernels
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until fragrant.

  2. Add bell peppers, zucchini, tomatoes, and corn. Cook until vegetables are tender.

  3. Sprinkle chili powder, cumin, paprika, salt, and pepper over the vegetables. Stir well to combine.

  4. Create four wells in the hash and crack an egg into each well. Cover the skillet and cook until eggs are done to your preference.

  5. Serve hot, garnished with fresh cilantro.
