How To Make Veggie Hash

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 sweet potatoes, diced
  • 1 zucchini, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add onion and garlic, sauté for 2 minutes.

  3. Add bell peppers and sweet potatoes, cook for 10 minutes or until veggies are fork-tender.

  4. Add zucchini and seasonings, cook for an additional 5 minutes.

  5. Serve hot and enjoy!
