How To Make Mixed Vegetable Hash Recipe

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 bell peppers, diced
- 2 zucchini, diced
- 1 cup diced mushrooms
- 1 cup cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet on medium heat.
- Add the onion and garlic and sauté until the onion is translucent.
- Add the bell peppers, zucchini, and mushrooms and sauté until tender, about 10 minutes.
- Add the cherry tomatoes and oregano and stir to combine.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
