Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 bell peppers, diced
  • 2 zucchini, diced
  • 1 cup diced mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet on medium heat.
  2. Add the onion and garlic and sauté until the onion is translucent.
  3. Add the bell peppers, zucchini, and mushrooms and sauté until tender, about 10 minutes.
  4. Add the cherry tomatoes and oregano and stir to combine.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
