Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 4 eggs

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.

  2. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

  3. Add the onion and garlic and cook until the onion is translucent.

  4. Add the zucchini, bell pepper, paprika, salt, and pepper and cook until the vegetables are tender.

  5. Crack the eggs over the top of the mixture, cover the skillet, and cook until the eggs are set to your liking.

  6. Serve hot.
