  • 2 medium sweet potatoes, peeled and diced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 eggs

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add sweet potatoes and onion, and cook until potato is soft and onion is translucent.

  3. Add red bell pepper and garlic, and cook for another 2-3 minutes.

  4. Stir in smoked paprika, cumin, and cinnamon.

  5. Season with salt and pepper to taste, and cook for another 2-3 minutes.

  6. In another skillet, cook eggs to desired doneness.

  7. Serve hash with eggs on top.
