  • 4 cod fillets
  • 2 large potatoes
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for frying
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Peel and grate the potatoes, then squeeze out any excess moisture.

  3. In a large bowl, combine the grated potatoes, breadcrumbs, garlic powder, paprika, salt, and pepper.

  4. Season the cod fillets with salt and pepper, then dip each fillet into the potato mixture, pressing firmly to adhere.

  5. Heat olive oil in a large skillet over medium heat. Add the coated cod fillets and cook for 2-3 minutes on each side until golden brown.

  6. Transfer the cod fillets to a baking sheet and bake in the preheated oven for 10-12 minutes, or until the fish is cooked through and the crust is crispy.

  7. Serve the potato-crusted cod with lemon wedges and enjoy!
