How To Make Cod with Butter Bean Colcannon

Ingredients
- 4 cod fillets
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of potatoes, peeled and diced
- 1 cup of butter beans
- 1/2 cup of milk
- 2 tbsp butter
- 2 cups of kale, chopped
Instructions

Preheat the oven to 375°F (190°C).

In a large ovenproof skillet, heat olive oil over medium heat.

Add the cod fillets to the skillet and cook for 3-4 minutes on each side, until golden brown.

Remove the cod from the skillet and set aside.

In the same skillet, add the chopped onion and minced garlic. Cook until softened.

Add the diced potatoes and butter beans to the skillet. Cook for 5 minutes, until the potatoes are tender.

Mash the potatoes and butter beans using a potato masher. Add the milk and butter, and continue mashing until smooth and creamy.

Stir in the chopped kale and cook for an additional 2 minutes, until wilted.

Return the cooked cod fillets to the skillet, nestling them into the colcannon mixture.

Transfer the skillet to the preheated oven and bake for 10 minutes, until the cod is cooked through and flakes easily with a fork.

Serve the cod with butter bean colcannon warm.
