Ingredients

  • 2 courgettes, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 thumb-sized ginger, grated
  • 1 red chili, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 can of coconut milk
  • 1 cup of vegetable stock
  • Salt to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat some oil in a pan and add the cumin seeds. Let them sizzle for a minute.

  2. Add the chopped onion, garlic, ginger, and chili to the pan. Sauté until the onion is translucent.

  3. Stir in the coriander powder, turmeric powder, and garam masala. Cook for another minute.

  4. Add the sliced courgettes and sauté for a few minutes, until they start to soften.

  5. Pour in the coconut milk and vegetable stock. Season with salt.

  6. Bring the curry to a simmer and let it cook for about 15 minutes, or until the courgettes are tender.

  7. Garnish with fresh cilantro and serve hot with cooked rice.
