Ingredients

  • 4 large russet potatoes
  • 6 strips of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Pierce the potatoes all over with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.

  3. Remove the potatoes from the oven and let them cool slightly.

  4. Cut the potatoes in half lengthwise and scoop out the flesh into a large mixing bowl, leaving a thin shell of potato in each skin.

  5. Mash the potato flesh with a fork or potato masher until smooth.

  6. Add the bacon, cheddar cheese, sour cream, milk, butter, garlic powder, salt, pepper, and green onions to the mashed potatoes. Stir until well combined.

  7. Spoon the potato mixture back into the potato skins, dividing it evenly among them.

  8. Place the filled potato skins back onto the baking sheet and bake for an additional 15-20 minutes, or until the tops are lightly golden.

  9. Serve hot and enjoy!
