Serves:
Ingredients
- 4 large potatoes
- 4 slices of bacon
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
-
Preheat the oven to 400°F (200°C).
-
Scrub the potatoes and prick them with a fork. Place them on a baking sheet and bake for 50-60 minutes, or until they are tender.
-
While the potatoes are baking, cook the bacon until crispy. Crumble it and set aside.
-
Once the potatoes are cooked, remove them from the oven and let them cool slightly. Reduce the oven temperature to 350°F (175°C).
-
Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell. Place the flesh in a bowl.
-
Mash the potato flesh with sour cream, milk, butter, shredded cheddar cheese, green onions, salt, and black pepper.
-
Spoon the mixture back into the potato shells and place them on a baking sheet.
-
Bake for an additional 20-25 minutes, or until the tops are lightly golden.
-
Serve hot, topped with crumbled bacon and additional sliced green onions if desired.
