How To Make Taco Bake Casserole Recipe

Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup frozen corn
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 tomato, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1/4 cup sliced black olives
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, brown the ground beef over medium heat until no longer pink. Add the onion, bell pepper, and garlic, and cook until vegetables are tender.

Stir in the taco seasoning, black beans, diced tomatoes, and frozen corn. Cook for 5 minutes.

In a 9×13 inch baking dish, layer half of the cooked rice on the bottom. Top with the beef mixture, and then sprinkle with half of the shredded cheese. Repeat the layers with the remaining rice and cheese.

Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes before serving.

Top with shredded lettuce, diced tomato, fresh cilantro, sour cream, and black olives.
