Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1/2 cup prepared mince pie filling
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  2. In a separate bowl, mix together milk, egg, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a lightly greased skillet or griddle over medium heat.

  5. Pour 1/4 cup of batter onto the skillet and spread it out into a circle.

  6. Drop a spoonful of mince pie filling onto the center of the pancake.

  7. Top with another 1/4 cup of batter to cover the filling.

  8. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown.

  9. Repeat with the remaining batter and filling.

  10. Serve the stuffed mince pie pancakes hot, dusted with powdered sugar.
