How To Make Healthy Mexican Chicken Casserole Recipe
A delicious, low-calorie and high protein casserole with Mexican flavors and vegetables.

Ingredients
- 1 lb boneless, skinless chicken breast, cut into small pieces
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno, seeded and chopped
- 1 can of black beans, drained and rinsed
- 1 cup of frozen corn
- 1 cup of salsa
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup of shredded Mexican cheese blend
- Chopped fresh cilantro for garnish
Instructions

Preheat oven to 375°F.

In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until no longer pink.

Add onion, garlic, bell peppers, and jalapeno to the skillet and cook until soft.

Add black beans, frozen corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Mix well and cook until heated through.

Transfer chicken mixture to a baking dish. Sprinkle shredded cheese on top.

Bake for 20-25 minutes until the cheese is melted and bubbly.

Garnish with cilantro and serve.
