How To Make Sausage & White Bean Casserole

Serves:

Ingredients

  • 4 sausages (such as Italian or chorizo)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of white beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large oven-safe skillet, cook the sausages over medium heat until browned on all sides. Remove from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes soft and translucent.

  4. Add the drained and rinsed white beans, diced tomatoes, chicken broth, dried thyme, and paprika to the skillet. Stir well to combine.

  5. Season with salt and black pepper to taste.

  6. Place the cooked sausages on top of the bean mixture in the skillet.

  7. Transfer the skillet to the preheated oven and bake for 45-50 minutes, or until the sausages are cooked through and the casserole is bubbly and golden.

  8. Garnish with freshly chopped parsley before serving.
