Ingredients

  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  2. Cook the macaroni according to the package instructions, then drain and set aside.

  3. In a large mixing bowl, combine the shredded cheddar cheese, cottage cheese, sour cream, Parmesan cheese, and melted butter. Mix well.

  4. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute until smooth.

  5. Gradually whisk in the milk, and continue whisking until the mixture thickens.

  6. Remove the saucepan from heat and stir in the salt, black pepper, and paprika.

  7. Pour the cheese mixture over the cooked macaroni and stir until well coated.

  8. Transfer the mac and cheese mixture to the prepared baking dish and spread it evenly.

  9. Bake in the preheated oven for 25-30 minutes, or until golden and bubbly.

  10. Let it cool for a few minutes before serving.
