Ingredients
- 2 cups all-purpose flour
- 1/2 cup warm water
- 1/2 tsp salt
- 2 medium potatoes, peeled and boiled
- 1/2 cup cottage cheese
- 1/4 cup chopped green onions
- Salt to taste
- Sour cream (for serving)

Divide the dough into 4 equal portions and roll each portion into a thin circle.
-
In a separate bowl, mash the boiled potatoes. Add cottage cheese, green onions, and salt. Mix well.
-
Spoon about 2 tablespoons of the potato filling onto one half of each dough circle. Fold the other half over and press the edges to seal.
-
Bring a large pot of salted water to a boil. Cook the varenyky in batches for about 5 minutes, or until they float to the surface.
-
Remove the varenyky with a slotted spoon and transfer to a serving platter. Serve hot with sour cream.
