How To Make Olha’s Varenyky (Perogies)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/2 tsp salt
  • 2 medium potatoes, peeled and boiled
  • 1/2 cup cottage cheese
  • 1/4 cup chopped green onions
  • Salt to taste
  • Sour cream (for serving)

Instructions

  1. In a large bowl, combine flour, water, and salt to make a soft dough. Knead the dough for about 5 minutes until smooth.

  2. Divide the dough into 4 equal portions and roll each portion into a thin circle.

  3. In a separate bowl, mash the boiled potatoes. Add cottage cheese, green onions, and salt. Mix well.

  4. Spoon about 2 tablespoons of the potato filling onto one half of each dough circle. Fold the other half over and press the edges to seal.

  5. Bring a large pot of salted water to a boil. Cook the varenyky in batches for about 5 minutes, or until they float to the surface.

  6. Remove the varenyky with a slotted spoon and transfer to a serving platter. Serve hot with sour cream.
