Ingredients

  • 2 cups chopped mixed vegetables (e.g. bell peppers, zucchini, carrots)
  • 1 cup cooked lentils
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the chopped vegetables with olive oil, chili powder, cumin, paprika, salt, black pepper, and garlic powder until well coated.

  3. Spread the vegetables out on a baking sheet and roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized.

  4. Meanwhile, heat the cooked lentils in a saucepan over medium heat until warmed through.

  5. Once the vegetables are done roasting, combine them with the lentils and mix well.

  6. Serve the spicy roast veg and lentils in bowls, garnished with fresh cilantro. Enjoy!
