Ingredients

  • 4 salmon fillets
  • 2 cups of mixed vegetables (such as broccoli, carrots, and bell peppers)
  • 1/4 cup of Dijon mustard
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of honey
  • Salt and pepper, to taste
  • For the horseradish sauce:
  • 1/2 cup of Greek yogurt
  • 2 tablespoons of horseradish
  • 1 tablespoon of lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, whisk together the Dijon mustard, olive oil, minced garlic, honey, salt, and pepper.

  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the mustard mixture evenly over the salmon.

  4. In a large mixing bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them around the salmon on the baking sheet.

  5. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.

  6. While the salmon is baking, prepare the horseradish sauce by mixing together the Greek yogurt, horseradish, lemon juice, salt, and pepper in a small bowl.

  7. Serve the mustard salmon and vegetables hot, with a dollop of horseradish sauce on top.
