Ingredients

  • 4 salmon fillets
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 pint cherry tomatoes
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the paprika, cumin, coriander, cayenne pepper, salt, and pepper.

  3. Place the salmon fillets on a baking tray lined with parchment paper.

  4. Sprinkle the spice mixture evenly over the salmon fillets, pressing gently to adhere.

  5. In a separate bowl, toss the cherry tomatoes with olive oil and season with salt and pepper.

  6. Arrange the cherry tomatoes around the salmon fillets on the tray.

  7. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

  8. Remove from the oven and garnish with fresh cilantro.

  9. Serve hot and enjoy!
