How To Make Italian Aubergine Traybake

Ingredients
- 2 large aubergines (eggplants)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 400°F (200°C) and grease a baking tray.

Slice the aubergines into rounds, about 1/4 inch thick.

In a small bowl, mix together the minced garlic, dried oregano, dried basil, salt, and black pepper.

Place the aubergine slices on the prepared baking tray and brush both sides with olive oil.

Sprinkle the garlic and herb mixture evenly over the aubergine slices.

Bake in the preheated oven for 15 minutes, then flip the slices and bake for an additional 10 minutes.

Remove the tray from the oven and top each aubergine slice with cherry tomato halves and shredded mozzarella.

Return the tray to the oven and bake for another 5-7 minutes, or until the cheese has melted and started to brown.

Remove from the oven and garnish with fresh basil leaves.
