Start your day right with these yummy breakfast taquitos. Filled with eggs, spinach, sausage, and cheese, and baked until crispy and golden.

Ingredients

  • ½lbsausage
  • 2cupsfresh spinach,chopped
  • â…“cupgreen bell pepper,diced
  • 6large eggs
  • 2tbspfeta cheese,crumbled
  • ½cupcheese,shredded, any flavor
  • ½cupsalsa,plus more for serving
  • 7medium tortillas,corn or flour
  • cooking spray
  • kosher salt

Instructions

  1. Preheat the oven to 425 degrees F.

  2. Brown the sausage in a large skillet over medium heat. When the sausage is almost cooked through, add the chopped spinach and bell pepper and sauté for a few minutes.

  3. Crack the eggs into a bowl, whisk and add to skillet. Stir occasionally until the eggs are just barely cooked through. Remove from heat and stir in the Feta cheese.

  4. Microwave the tortillas for 30 seconds or until pliable.

  5. Divide filling between tortillas. Top each with a little shredded cheese and salsa.

  6. Roll up tightly and place, seam-side down, on a baking sheet that has been lined with foil. Spray tops of taquitos lightly with cooking spray and sprinkle with a little kosher salt.

  7. Bake for 10 to 15 minutes or until crispy.

  8. Serve with extra salsa for dipping, and enjoy!
