How To Make Rain-or-shine Leg of Lamb

Serves:

Ingredients

  • 1 leg of lamb, bone-in (about 4-5 pounds)
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).

  2. In a small bowl, combine the minced garlic, rosemary, thyme, olive oil, salt, and pepper to make a herb rub.

  3. Place the leg of lamb in a roasting pan and generously coat it with the herb rub, massaging it into the meat.

  4. Cover the roasting pan with foil and roast the lamb for about 1 hour.

  5. Remove the foil and continue roasting for another hour, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.

  6. Remove the lamb from the oven and let it rest for 10-15 minutes before carving.

  7. Serve the leg of lamb with your favorite side dishes.
