How To Make Merguez Lamb Kebabs

Ingredients
- 1 lb ground lamb
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup chopped fresh parsley
- 4 pita breads
- Tzatziki sauce for serving
Instructions

In a large bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix well to combine.

Shape the lamb mixture into small kebabs, about 2 inches in length.

Preheat a grill or grill pan over medium-high heat. Brush the kebabs with olive oil.

Grill the kebabs for about 4-5 minutes per side, or until they are cooked through and have a nicely charred exterior.

Remove the kebabs from the grill and let them rest for a few minutes.

Warm the pita breads on the grill for a minute on each side.
