Ingredients

  • 4 merguez sausages
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 2 cans (400g each) white beans, drained and rinsed
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the merguez sausages and cook until browned. Remove the sausages from the pot and set aside.

  2. In the same pot, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.

  3. Add the diced tomatoes, drained white beans, paprika, cumin, salt, and pepper to the pot. Stir well to combine.

  4. Return the cooked merguez sausages to the pot and mix them with the bean mixture.

  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 2 hours, stirring occasionally.

  6. Once the flavors have melded together and the sausages are tender, remove from heat.

  7. Serve the Merguez Beanpot hot, garnished with fresh parsley.
