Ingredients

  • 1 lb merguez sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup couscous
  • 1 1/2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the merguez sausages and cook until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the diced onion, minced garlic, bell peppers, and jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.

  3. Add the ground cumin, ground coriander, paprika, and cayenne pepper to the pot. Stir well to coat the vegetables in the spices.

  4. Return the merguez sausages to the pot and add the couscous and chicken broth. Stir to combine all the ingredients.

  5. Bring the mixture to a boil, then reduce heat and cover the pot. Simmer for 10-15 minutes, or until the couscous is cooked and the flavors have melded together.

  6. Season with salt and pepper to taste. Serve the spicy merguez and couscous pot hot, garnished with fresh cilantro.
