Ingredients

  • 1 lb lamb leg steak, sliced into strips
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/4 tsp ground cumin
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Rinse the quinoa and set aside.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Add the onions and cook until translucent.

  4. Add the garlic and cook for 30 seconds.

  5. Add the sliced lamb and cook until browned on all sides.

  6. Add the oregano, coriander, and cumin.

  7. Season with salt and black pepper, and cook for an additional 2-3 minutes.

  8. Add the quinoa and chicken broth, and bring the mixture to a boil.

  9. Reduce the heat, cover the skillet, and simmer for 20-25 minutes or until the quinoa is fully cooked.

  10. Fluff the pilaf with a fork and serve.
