Ingredients

  • 1 lb lamb, diced
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/4 tsp chili powder (adjust according to your preference)
  • 1 cup coconut milk
  • 2 cups chicken broth
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Oil for cooking

Instructions

  1. Heat oil in a large pan over medium heat. Add the chopped onion and cook until golden brown.

  2. Add the minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, garam masala, and chili powder. Cook for a minute.

  3. Add the diced lamb and cook until browned on all sides.

  4. Add the basmati rice and cook for a couple of minutes, stirring continuously.

  5. Pour in the coconut milk and chicken broth. Season with salt to taste. Bring to a boil.

  6. Reduce the heat to low, cover the pan, and let the rice cook for about 20-25 minutes, or until the rice is tender and cooked through.

  7. Once the rice is cooked, fluff it up with a fork and garnish with chopped cilantro.

  8. Serve the spiced lamb & coconut pilaf hot, with raita or yogurt on the side.
