Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional for spice)
  • Salt and pepper to taste
  • Shredded cheddar cheese, for topping
  • Chopped green onions, for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the chopped onion, garlic, and bell pepper to the pot. Cook until the vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper.

  4. Simmer the chili over low heat for 1 hour, stirring occasionally.

  5. Serve the chili hot, topped with shredded cheddar cheese and chopped green onions.
