How To Make Anise and Blueberry Muffins

Deliciously fluffy and sweet muffins with a hint of anise flavor and bursts of fresh blueberries.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 egg
  • 1 tsp anise extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large mixing bowl, combine flour, baking powder, salt, and sugar.

  3. In a separate bowl, whisk together melted butter, milk, egg, and anise extract.

  4. Add wet ingredients to dry ingredients and mix until just combined.

  5. Fold in fresh blueberries.

  6. Grease a muffin tin and divide batter evenly among 12 cups.

  7. Bake for 18-20 minutes, until muffins are golden brown and a toothpick inserted in the center comes out clean.

  8. Allow muffins to cool in tin for 5 minutes before removing and serving.
